3 Guacamole Recipes With a Twist

What is Guacamole?

A dish of mashed avocado traditionally mixed with chopped onion, tomatoes, chilli peppers, and seasoning.

Kale Guacamole:

- 2 Avocados

- 1/4 Small red onion

- Handful of small tomatoes

- 1 Small garlic clove

- 1/2 Cup kale

- Chillis, salt, pepper

- 1 Small jalapeno

- Squeeze of fresh lemon juice

Method:

- Chop up all the vegetables very finely. Next mash the avocados. Add the seasonings and the lemon juice and mix together.

Black Bean Guacamole:

- 2 Avocados

- 1/4 Small red onion

- 1 Small garlic clove

- Handful of small tomatoes

- 1/2 Can black beans

- 1/2 Small can of sweetcorn

- Chillis, salt, pepper

- Squeeze of fresh lemon juice

Method:

- Chop up all the vegetables very finely. Next mash the avocados. Add the Black beans and sweetcorn and mix this together. Next add the seasonings and the lemon juice and mix together. Serve.


Roasted Tomato Guacamole:

- 2 Avocados

- 1/4 Small red onion

- 1 Small garlic clove

- 1/2 Cup tomatoes

- 1/2 Cup sundried tomoatoes

- Chillis, salt, pepper, basil

- Squeeze of fresh lemon juice

Method:

- Roast cherry tomatoes in the oven with a drizzle of olive oil and salt for 10-15 minutes. Next, chop up all the vegetables very finely. Next mash the avocados. Add the seasonings and the lemon juice and mix all the ingredients together.
