Here are a variety of vegan cookie recipes that will get your mouths watering!

The perfect healthy vegan chocolate chip cookies!

Recipe:
- 1 cup Oats
- 2 tbsp Coconut oil
- 1/4 cup coconut sugar 
- 1/2 cup Almond milk 
- 1/4 cup buckwheat flour
- 1 tsp baking powder 
- 1 tbsp flaxseed 
- 1/2 cup chocolate chips 
- 1 dash of lemon juice, cinnamon and nutmeg
- 1 tsp vanilla extract and salted caramel flavouring
- 1 scoop vegan vanilla protein


Method 

Blend the oats in a blender to make it a flour, add the rest of the dry ingredients to the flour in a mixing bowl. In a separate bowl mix the wet ingredients (making sure the oil is melted. Let the flaxseed sit in the wet ingredients mixture for 5 mins and then transfer the wet into the dry and start mixing. It should be a thick dough texture..add extra almond milk if needed. Shape into cookie to the size you’d like and put in the oven for 12 mins at 200 degrees. Enjoy.

Mini vegan red velvet cookie!

Beetroot powder gives the cookies this amazing colour! Beets are such good brain foods and help in keeping your blood pressure steady due to the amazing nitric oxide in them that relaxes blood vessels and dilates them to open up for a better blood flow..plant power!

Recipe 
- 1 cup Oats

Vegan double chocolate chip cookies

Recipe
- 1 cup Oats
- 3 tbsp coconut oil
- 1/4 cup quinoa flour 
- 1/8 cup peanut butter powder
- 1 tbsp cacao powder
- 1/2 scoop vegan chocolate protein powder 
- 1/4 tsp Salt
- 1/4 tsp baking powder
- 4 dates
- 1 1/2 cup hot water
- 1/2 cup chocolate chips
- 1 tbsp chia seeds
- Extra (additional water if dough is dry) 
- Dash of Vanilla extract 
- 1 teaspoon maca powder

Method 

Put all the wet ingredients in a blender and blend until smooth, add the wet into the dry ingredients and mix well. Let it sit for 5 mins so the chia seeds can expand. This should make a tough large cookie dough ball that can be handled and shaped into cookies to the desired size. Next, place in a preheated oven of 190 degrees for 15 mins! Enjoy.
